Family Style Potato Bourekas
This vegan, non-dairy, easy-to-prepare dish can be perfect for any occasion! Crispy, so delicious, and a family favorite!

Instructions
- 1.Preheat the oven to 400F / 200C
- 2.In a skillet pan on medium heat pour the olive oil. Add the chopped onion, salt, pepper, and turmeric.
- 3.Sauté and stir for 2 minutes.
- 4.Add the boiled potatoes and mash them with a potato masher. Mix it all to a smooth mixture. Let it cool for 15 minutes.
- 5.Take an oven-safe pan and spray olive oil on the bottom of the pan.
- 6.Take one phyllo dough roll. Crinkle-fold one phyllo sheet at a time, and cover the bottom of the pan.
- 7.Spread the potato mixture evenly on top of the phyllo and make sure everything is covered.
- 8.Take the second roll of the phyllo dough and roughly crinkle-fold the phyllo sheets on top.
- 9.Generously spray olive oil on top of it all and sprinkle nigella seeds.
- 10.Bake it on 400F for 35 minutes until it’s golden and ready.
