Juicy Chicken Kebabs

Juicy, golden-baked chicken kebabs blended with fresh herbs and spices, topped with tahini and sumac—an easy, healthy dish your family will adore!

Juicy Chicken Kebabs

Ingredients

  • 4 pieces of chicken breast (3 pounds)
  • 2 green onions, cut to halves
  • 1 red onion, cut to quarters
  • 1 zucchini, cut to quarters
  • 4 garlic cloves
  • Handful of parsley
  • Handful of cilantro
  • 1 egg
  • 1/3 cup of olive oil
  • 2 tablespoons of bread crumbs
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 teaspoon of paprika
  • 1 teaspoon of coriander
  • 1/2 teaspoon of cumin
  • 1 teaspoon of garlic powder

Instructions

  1. 1.Preheat the oven to 420F / 220C
  2. 2.In a food processor add the green onions, garlic cloves, zucchini, and a handful of parsley and cilantro. Pulse it 2-3 times.
  3. 3.Add 2 pieces of chicken breast and pulse twice.
  4. 4.Add 2 more pieces of chicken breast and pulse again.
  5. 5.Add the rest of the ingredients and all the seasoning. Pulse it 2-3 times to get a unified mixture.
  6. 6.Using wet hands, make oval shape kebabs from the chicken mixture and place them on a baking pan. You should get about 30 kebabs.
  7. 7.Spray avocado oil on top of the kebabs and sprinkle flaky salt.
  8. 8.Bake in a preheated oven on 420F for 25 minutes, then transfer to convection broil on 450F for 7-8 minutes to get a nice golden color.
  9. 9.Serve it on a nice plate with a drizzle of tahini, fresh herbs, and a touch of sumac.
