Cucumber Salad
So I guess cucumber salad is getting viral on social media, and I am taking advantage and making my own Mediterranean version! This salad will be even tastier the day after!

Instructions
- 1.In a salad bowl add the sliced cucumbers, shallot, jalapeño pepper, and chopped cilantro.
- 2.Put the salt, black pepper, tahini, vinegar, lemon juice, olive oil, and cilantro in a small food processor and process it to a smooth dressing.
- 3.Pour the sauce on top and mix it well.
- 4.Garnish with a drizzle of olive oil, chopped cilantro and a touch of sumac.
Ingredients
- •2 English cucumbers, cut to thin slices using a mandolin
- •1 shallot, cut to thin slices using a mandolin
- •1/2 jalapeño pepper, cut to thin slices using a mandolin
- •Handful of chopped cilantro
- •1 teaspoon of salt
- •1/2 teaspoon of black pepper
- •2 tablespoons of tahini paste
- •1 tablespoon of white vinegar
- •Juice from 1 lemon
- •1 tablespoon of olive oil
- •1 tablespoon of chopped cilantro
- •1 tablespoon of olive oil
- •A touch of sumac, for garnish.
