Round Beef and Potato Bourekas
A festive round beef bourekas made with rolled puff pastry, savory beef and potato filling, and a golden sesame topping.

Instructions
- 1.Preheat the oven to 400F / 200C.
- 2.Heat the olive oil in a skillet over medium heat. Add the chopped onion, salt, black pepper, turmeric, paprika, cumin, and cinnamon.
- 3.Saute and stir for about 2 minutes. Move the onions to the sides of the pan.
- 4.Add the ground beef. Break it up with a wooden spoon and cook, stirring occasionally, for about 10-15 minutes, until fully cooked.
- 5.Add the boiled potatoes and mash them into the beef mixture using a potato ricer. Add the chopped cilantro, minced garlic, date syrup, and soy sauce.
- 6.Mix everything together for 2 more minutes until well combined and the excess liquid has evaporated. Let the filling cool completely.
- 7.Spray the bottom of a 10-inch (26 cm) round oven-safe pan with olive oil or avocado oil.
- 8.Divide the puff pastry into 2 equal parts. Roll out each piece, place half of the beef filling along one edge, and roll it into a long log. Stretch the log a bit.
- 9.Cut into 2-inch pieces. Repeat with the remaining pastry and filling.
- 10.Arrange the pieces upright, side by side, in the pan.
- 11.Brush the tops with beaten egg and sprinkle with sesame seeds.
- 12.Bake on 400F for 45-50 minutes, until golden and crisp.

- •1 large sweet onion, finely chopped
- •2 pounds of ground beef
